Ingredients
4 duck breasts
Spice Blend:
- 2 tsp ground nutmeg
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 ½ tsp paprika
- 1 tsp allspice
- 1 tsp ground ginger
- ¼ tsp cinnamon
Citrus Sauce:
- 2 tbsp honey
- Zest 1 orange
- Juice 1 orange
- Juice 1 lemon
Instructions:
- Score the duck breasts by slicing a few slits through the skin but not through the fat. Season meat side with salt and spice blend. Season the fat side with salt.
- Cook the duck breasts by starting them in a cold pan, fat side down. Cook on medium heat for 10 minutes without flipping. Flip and cook spiced side for 4 minutes. Remove from heat and let rest for 5 minutes.
- In a small saucepan, add zest, juice, and honey. Simmer the mixture until reduced and syrupy.
- Slice the duck breasts and drizzle with citrus honey sauce.
