Processing
Hand selection in the vineyards, selection of the bunches, selection on the grape beans, destemming, soft crushing cryomaceration, maceration in special vinification vats, indigenous organic yeasts.
Vinification
Cryomaceration, maceration in special shaped and performing vinification in stainless steel vats, indigenous organic yeasts selected by the University of Florence (DNA Sangiovese Project year 2007 run by Consorzio del Brunello di Montalcino).
Maturation
36 months in first quality 25-hl Allier wood oak barrels, eight months in the bottle for refining
Characteristics
Limpid, brilliant with a bright garnet color. Intense ruby red tending towards garnet as it ages. Characteristic intense perfume, persistent, ample, ethereal, dry, warm, tannic, robust, and harmonious. Scents of undergrowth, perfumed wood, berries, vanilla, and jam. Elegant and harmonious body, vigorous, racy with a lengthy aromatic persistence.

Recommended Pairing: Excellent with roasts, game, aged cheeses; meditation wine

Unique ripe-peach character to the cherry and currant undertones. Lots of flowers. A pungent nose! Full-bodied with layers of fruit and creamy, refined tannins that open up at the end of the palate. It goes on for minutes. Spicy and crunchy at the end. Drink after 2023.

Aromas of cedar, mocha and dark-skinned fruit emerge from the glass. The solid palate offers baked plum, clove and tobacco alongside close-grained tannins. Drink 2023–2029.

The 2015 Brunello di Montalcino Riserva from Cordella wafts up with a display of dusty dried flowers, incense, licorice, shavings of pine and crushed blackberries. It’s a soft and polished effort which finds harmony through a display of ripe cherry, minerals, cooling herbal tones and brisk acids. A coating of fine-grained tannins wrap the palate in youthful structure, while a hint of alcohol-derived warmth and mocha resonate.
