It’s always a fascinating experience meeting with Ty Caton, as he has a ton of energy and is always running in every direction. He is incredibly proud and passionate about his wines, especially his Winemaker’s Cuvée Cabernet Sauvignon. Just last year, the appellation of his estate winery received the prestigious Moon Mountain District designation for its unique terroir that is home to delicious Cabernet. The Caton Vineyard is located on the western slopes of the Mayacamas Mountains. The property was founded in the 1920s by Carl Bergfield and operated as a winery during prohibition. It was purchased by the Caton family 33 years ago and re-planted in 1997. It consists of 40 prime acres that is split into 21 unique blocks. This Winemaker’s Cuvée spent 15 months in French oak, half of which was new. It’s a mighty lush Cab with red plum, cherry vanilla, cassis and mocha with licorice and spice. It’s a zesty wine with round tannins and has a pronounced flavorful finish. This wine was just released in February 2016 so give it a little time and it will pay handsome dividends. Pair this pretty wine with sirloin steaks with fresh garlic and cracked sea salt, flambéed steak diane, hearty chicken in a mushroom wine sauce, coq au vin, veal chops in a rosemary sauce or stuffed portobello mushrooms.

Tasting Notes
The 2014 Estate Winemaker’s Cuvée meets the palate with rich and full-bodied flavors of black currant, red plums, and cassis, followed by oak notes of cedar and vanilla. These dark flavors produce a lush and velvety textured mouth feel that combine with supple tannins, and leads to a long silky finish.
