Soil Composition: Vine greatly suited to the hilly soils of mainly volcanic origin but also lime/lay. Exceptional quality comes from the ample, deep, lean soft soils of Taurasi where nothing else is grown.
Winemaking: Maceration for about 20 days, fermentation partially with autochthonous yeasts starter, completed in French oak, refined in French wood for 24 month
Fining: Steel followed by a brief step in French oak barrel size 225L.
Food Matching: Red meat, game, first course, dishes with meat sauces
