Winemaking Notes
This wine, a limited production single-vineyard Cabernet Sauvignon, is dedicated to Paul Maroon's grandfather and comes from specially selected rows of the vineyard. It is a big, chewy, dark wine with many spices on the nose, accented by creamy vanilla, oak, and mocha. The mouth is rich with lots of spicy flavors, deep dark berry fruit, medium tannins, milk chocolate, coffee, and cocoa flavors on the finish. It is aged in approximately 40% new French oak barrels for 26 months, which gives the wine hints of toasted oak and vanilla. This wine will age well for the next 10-12 years. We recommend decanting one hour prior to serving.
