Winemaking Notes
Grape selection based on parcels, vineyard age, and maturation degree. Before fermentation, the grapes are macerated for three days at a temperature of 4-6 degrees C to get the full extraction of aromas. Fermentation at a controlled temperature of 28 degrees C for ten days. After the fermentation process, the wine is macerated for two weeks to complete the extraction of the polyphenols. After malolactic fermentation in new French oak barrels, the wine is aged in French (70%) and American (30%) oak barrels (new (70%) and first use) for 24 months, being then rounded in the bottle for at least 12 months.
