Winemaking Notes
Grape selection based on parcels, vineyard age, and maturation degree. Before fermentation, the grapes are macerated for three days at a temperature of 4-6 degrees C to get the full extraction of aromas. Fermentation at a controlled temperature of 28 degrees C for ten days. After the fermentation process, the wine is macerated for two weeks to complete the extraction of the polyphenols. After malolactic fermentation in new French oak barrels, the wine is aged in French (70%) and American (30%) oak barrels (new (70%) and first use) for 24 months, being then rounded in the bottle for at least 12 months.

Toasty blackberry and cassis aromas are classic for Ribera, while the firm, compact palate is structured but not fiercely tannic. Flavors of spiced blackberry, plum and fig finish with the right interplay between fruit and oak. Drink through 2028.

With an accent on black fruit flavors, this expansive wine holds its balance. Notes of cinnamon mix with flavors of blackberries and sweet raspberries while the acidity stands sentinel, taking care that nothing becomes cloying. This is made by Bodegas Gormaz, which farms 570 acres of vineyards in Soria, in the eastern reaches of Ribera del Duero, spread over more than a thousand small plots.
