Vinification
The grapes are pressed as soon as they arrive at the winery; clear juice drawn after 48 hours then kept at low temperatures for 2 and 6 days before fermentation. Introduction of yeast and initiation of alcoholic fermentation conducted with thermoregulation. Wine matured on the fine lees.

Tasting Notes
Color: Pale yellow with green highlights
Nose: Fruity and expressive, the minerality and fine limestone notes mingle with aromas of white stone fruit, a complex and dense wine
Palate: Generous fruit, fleshy and vivacious on the attack, notes of ripe fruits, an exposition of the terroir through the palate with acidic freshness and fresh fruits, with a long and refreshing finish

Pairing
Accompanies fish and shellfish (ideal with scallops), cheeses, especially goat cheese (Crottin de Chavignol), surprisingly effective alongside white meats.

Service
Serve cold, between 10-12 degrees C.
