Terroir
The main base is of the Jurassic era, from the Kimmeridgian some 150 million years ago. Thus, large fossil deposits from billions of tiny oysters constitute much of the underlying geology, an inheritance from the warm and shallow seas once covering Burgundy. Chablis's terroir has made it France's most famous white wine appellation, producing wines with a worldwide reputation for possessing an irresistible mineral character.
Vinification
We utilize stainless steel tanks and natural malolactic fermentation out of respect for the terroir's character, allowing the full expression of Chablis's minerality. Cold storage in an isothermal tank promotes the precipitation of tartaric acid. Light filtration on Kieselguhr naturally clarifies the wine.
Tasting Notes
This wine presents a brilliant yellow color with pretty green reflections. Its nose is already very expressive with floral notes. On the palate, we find floral notes accompanied by a beautiful roundness, but also some citrus fruit notes come to mingle; they bring a beautiful acidulous and mineral structure. The finish is characterized by great intensity, depth, a sign of optimal maturity.
Food and Wine Pairings
Perfect pairing with appetizers, seafood, oysters, fish dishes, sushi, and white meats. Also very good with cheeses - goat, Beaufort, Comte, and Emmental.

Slight yeasty funkiness blends with green-pear peel, creaminess and lemon on this wine's nose. The palate shows beautiful concentration on a ripe, slightly pithily textured body reminiscent of lemon zest. All is fresh, vivid and juicy.

Attractive richness on the palate, a touch of spice, and crisp, lingering acidity to finish. Lamblin is a large negociant based in Maligny, sometimes producing rather less-thrilling examples. This is a good effort which will appeal to many and should represent decent value
