The single-vineyard approach, sustainable viticulture, and human imprint are the essence of common thought and collective work. Set on these fundamentals, the Les Chemin range follows the way of identity and uniqueness. These cuvees are elaborated with indigenous or selected yeasts, with or without malolactic fermentation, matured under cork, and disgorged by hand.

Vinification
Slow fermentation in barrels and tanks, maturing on lees ten months, partial malolactic fermentation.

Strongly lactic on the nose - lemon curd spooned through sour cream. Pistachio nuttiness, salty, clenched and lean muscularity, tiny but super-spiky bubbles. Unfurls like a large, white, heavy flag whipped by wind. Dramatic, distinctive and only just beginning. (TC)
