Winemaking
80 hectoliter stainless steel containers under temperature control at a maximum of 28 degrees C for 25 days. Two-day pre-fermentation steeping at 15 degrees C. Complete malolactic fermentation. 48 months aging in 10 hectoliter French oak casks. 12 months refining in bottle.
