2021 AOC Touraine

History
The vineyard is located in the heart of the Loir et Cher, on a clayey-limestone and clayey-siliceous soil. The winegrower, Mr. Jean Max Pinard, took over his father's estate in 1982. The oldest vines have an average age of 65 years. Immediate pressing after selection of the must, breaking in for 12 to 24 hours, and then fermentation under temperature control in a thermo-regulated vat.

Climate: Temperate climate influenced by the Loire, the Cher, and the Sologne forest
Geology: Clay to flint, chalky subsoil, sand on clay
Varietal: Sauvignon Blanc

Winemaking
Direct pressing with the selection of musts. Settling between 12 to 24 hours and fermentation in temperature-controlled stainless steel vats. Storage in vats until bottling in February-March to preserve the aromas of the grape variety.

Tasting Notes
Beautiful pale yellow color. The nose opens with aromas of exotic fruit. The attack with light citrus notes is frank and supple and extends to a mineral finish.

Food Pairing
Ideal with seafood and fish in sauce, it is a wine to drink young to keep all its freshness.
