Grapes are sourced from vineyards in the Estrella, Geneseo, and Templeton Gap Districts of Paso Robles.

Winemaking
Fermented in temperature-controlled stainless steel tanks with maximum fermentation temperatures up to 82-90 F to enhance mouthfeel or heighten aromatics. Used a mix of yeasts tailored to bring out the qualities of each variety in order to increase aromatic complexity, color, structure, and mouthfeel. Pressed at dryness after 17 days of maceration. Racked off gross lees after three days settling and inoculated for malolactic fermentation. 100% malolactic fermentation.

Tasting Note
Dark black cherry, brambly blackberry, vanilla, and cocoa aromas. Soft, juicy fruit flavors combine in the mouth in this complex blend with hints of leather and spice. Tannins are round and chewy with a rich, juicy mouthfeel that ends with a warm and spicy, toasty vanilla-laced finish.
