We are incredibly grateful to call this prized Calistoga landscape our own. Over the past several years, we have revived its dramatic vineyards, restored the 1916 barn to its former glory, engineered a cutting-edge winemaking facility, and assembled a team of world-class vineyardists and winemakers to craft fine wines worthy of its majesty. Balancing the artistry of traditional winemaking with the precision of advanced technology is not a simple way to make wine, but it is the best way. We are delighted to share the result of our efforts with you as we launch the fifth and final phase of our lifelong dream.
Tasting Notes
Provide an artist with multiple colors, and they can do beautiful things! The 2018 Cabernet Sauvignon shows the pleasure of blending. The bouquet reveals a quiet power with blackberries, blueberries, and chocolate anchored by a beautiful rich earthiness. The palate is bold and balanced, lacing fruit with hints of black licorice, crushed gravel, and baking cocoa. The tannins have density and energy in thoughtful combination, revealing elements of the full range of fruit styles grown across our phenomenal collection of vineyards.

The 2018 Cabernet Sauvignon Phase V is one of the best wines I have tasted from proprietor Mike Davis. It has all the intensity and power readers have become accustomed to, but less of the bombastic opulence of years past, and that's a good thing as there is still plenty of richness here. Inky dark fruit, chocolate, new leather, licorice and spice are all wrapped together, with silky tannins that convey a real sense of polish. A blend of 88% Cabernet Sauvignon, 8% Cabernet Franc, and 4% Petite Sirah, the 2018 Cabernet Sauvignon Phase V offers a big, sexy nose of blackberries, blueberries, damp earth, chocolate, espresso, and tobacco. Full-bodied on the palate, it has an almost Graves-like earthiness, a rich, fleshy mouthfeel, plenty of tannins, and a good finish. Give bottles 3-4 years of bottle age and it should evolve for 15-20 years.

Aromas of candied raspberries, mochaccino and roasted pine needles. As with the Davis Cabernet, the palate is massively extracted and polished, to the point of two-dimensionality. Drinkers of this slick, luxe style of Cabernet won't be disappointed, but best to drink young to take advantage of its stylistically-led profile.
