Cultural Methods
Plowing of the soil, controlled deliberate grass growth, 2 cluster thinning (one at the closure of the grape cluster and one at the beginning of veraison). Leaves are thinned out when flower buds appear.
Winemaking
Double sorting of the crop in the vineyard and at the winery. Filling of the vats by gravity without crushing. Punching the caps every 3 hours until 1070 density, then every 6 hours until 1050 density, and once a day until 1000 density. Temperature during alcoholic fermentations at 27 degrees C max. The vatting period is 21 to 25 days. Malolactic fermentation in new barrels. Maturation on lees until spring 2015. No fining.

Very pretty aromas of chocolate, forest floor and berries follow through to a full body, tangy acidity and a long and flavorful finish. Tangy. Better in 2019 but excellent now.

The 2014 Cap St George has an austere and rather ephemeral bouquet that needs more presence. The palate is ripe on the entry with crisp acidity, balanced yet missing density and length. It is a satisfactory easygoing Saint Emilion.

The debut vintage shows fresh black raspberry and spice on the nose. The wine is soft textured, medium bodied, supple and an early drinking charmer. The wine was produced from 91% Merlot and 9% Cabernet Franc. The wine [...] aged in 45% new, French oak barrels.
